Saffron Cardamom Buns: Modern Lussekatter

Sweden's lussekatter have marked winter mornings for generations, and this version keeps the ritual while sharpening the flavor: a soft, buttery dough colored deep gold by saffron bloomed in warm milk, with cardamom folded through for warmth. Shaping the twelve S-curls is slow, pleasant work — the kind of baking that belongs to an unhurried Saturday and a pot of coffee.

Ingredients

  • 20 threads Raihan Afghan Super Negin saffron, bloomed in 1 cup warm milk
  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp salt
  • 1 tsp ground cardamom
  • 1 packet (7 g) instant yeast
  • 1/2 cup butter, melted
  • 1 egg
  • 1 egg yolk (for wash)
  • 24 raisins (decoration)

Instructions

  1. Whisk flour, sugar, salt, cardamom, yeast.
  2. Add saffron milk, melted butter, egg. Mix until shaggy. Knead 8 minutes until smooth.
  3. Cover. Rise 1 hour until doubled.
  4. Divide into 12 pieces. Roll each into a 10-inch rope. Coil both ends inward to form S shape. Place a raisin in each coil.
  5. Arrange on parchment-lined sheet. Rise 30 min.
  6. Preheat 375°F / 190°C. Brush with egg yolk. Bake 12–14 min until deep golden.

Chef's note

Keep the milk just warm to the touch — hot enough to coax color from the threads, never so hot it stresses the yeast. Genuine Super Negin keeps releasing pigment well past the mixing bowl, so the dough that comes out of its first rise will be a noticeably deeper gold than the one that went in. Crumbling the threads between your fingers before blooming speeds things along.
