It takes one small pot and under ten minutes, which makes it a natural first recipe for anyone opening a jar of real saffron for the first time. Honey and a few pistachios finish it into a proper evening drink.

- 8 threads Raihan Afghan Super Negin saffron
- 1 cup unsweetened almond milk
- 2 crushed cardamom pods
- 1 tsp honey or maple syrup

Instructions
- Heat almond milk + saffron + cardamom + cinnamon over low heat 6 minutes.
- Off heat. Steep 2 minutes covered.
- Strain or leave threads in. Stir in honey and salt.
- Top with pistachios.
Chef's note
Almond milk is leaner than dairy, so the color arrives before the flavor does. If the evening allows, leave the pot covered off the heat a few minutes past the recipe — the threads keep giving — and skip the strainer: the softened stigmas at the bottom of the cup are perfectly good to drink.
